Simple. Versatile. Delicious.
For our large family size, this is how much we make:
3 lbs of sweet potatoes or yams, diced to 1/2" or 3/4" cubes
1 medium to large onion (your choice of sweet, white, yellow, or purple...... oh I have GOT to try purple for the color!), diced
5 cloves of garlic (we used a little more than half of a large bulb), minced
Chop the above ingredients and mix them together directly in a baking pan (we used a grilling pan with sides like a smaller cake pan) or in a bowl if you'd like to grill/broil/bake them in foil packets. Either way works. Drizzle generously with olive oil (about 1/3 of a cup) and sprinkle heavily with salt & pepper OR use some Cajun seasoning. Mix it up, close the top with foil (or roll edges of foil packet tightly), and grill, broil, or bake until sweet potatoes/yams are fork tender. Overcooking them will make the sweet potato/yam soft and mushy, and we prefer ours to be not crisp but not mush. They keep warm for quite a while in their cozy foil, so if they get done cooking before your other dishes, set them on the table (don't leave them in the grill or oven or they'll overcook) without opening the foil.
