1 3/4 cup Bob's Red Mill Gluten-Free All Purpose Flour
2 tsp. baking powder
1 tsp. salt
1/4 cup coconut oil
2 Tbsp. flaxmeal
5 Tbsp. water
1 1/2 cup almond milk (I use unsweetened)
1 tsp. sugar
1 tsp. ground cinnamon
3/4 tsp vanilla
- Mix together flaxmeal in water and set aside to firm up for 5+ min. During this time I preheat my waffle maker.
- Mix together all ingredients, remembering to add in the flaxmeal mixture, using an electric mixer.
- Grease waffle iron with spray coconut oil if needed and put in the appropriate amount of batter for your maker. (Usually around 1/4-1/3 cup). Cook according to waffle maker instructions.
- Serve immediately with your choice of syrup, applesauce, raspberry chia jam, or blueberry compote (I like to add 1 tsp almond extract after removing blueberry compote from the heat to make it ahhh-mayyy-zingly yummy).
