Okay, so this isn't as much a recipe (I didn't MAKE any of the ingredients, just had the epiphany to put them together) as it was an amazing idea. SO amazing I had to set down my spoon (yes, that is a baby spoon I was using to eat it- I wanted to savor my treat!) long enough to take a picture before the last of this mouth watering dessert was gone. I know it doesn't look like much, but, mmmmmm, this tastes incredible:
Almond Dream Chocolate Frozen Non-Dairy Dessert (Casein/Gluten/Egg free)
Topped with mini mashmallows and Non-Diary chocolate chips (I used Ghiradelli Semisweet Baking Chips- the ones in the gold bag)
If you have Marshmallow Fluff on hand, that would make it even more authentic, but this is what I had in the cupboard and it was a heavenly flavor to my dairy-deprived tastebuds. I have been off dairy for 9 months and I terribly missed ice cream, so when I saw this was on sale at our grocery store for $2.99 a pint (I know that's expensive, but you should have seen what it usually costs!), I snatched it up on an impulse buy.
I had some plain and thought it was good: mellow chocolate flavor, not too rich, and pretty good consistency for being non-dairy (keep in mind any ice cream that doesn't involve any dairy isn't going to have the same consistency, but this one was not rock hard nor was it ice-crystally, and it felt quite smooth as it melted in my mouth). I couldn't figure out what the slight aftertaste reminded me of. It was a pleasant taste; kept me going back for more. I normally can't stand after taste, especially splenda or other fake sugar tastes, so I was surprised this one was so nummy.
The next day, when I had some more, it hit me: the aftertaste reminded me somehow of rocky road ice cream. I checked the ingredients to see if there was anything marshmallowy in it and there wasn't that I could tell. Duh! Must add some! While I was digging out the marshmallows, I came across the chocolate chips and who could pass those up? I honestly can't remember for certain, but I thought there were chocolate covered peanuts in the original rocky road ice cream. I wasn't about to take the time to buy or make those, and the chocolate chips were hard enough when they froze next to the ice cream that in combination with the very slight hint of nuttiness you get from the Almond Dream, it was an incredible discovery. One that will likely cost me some $ in impulse buying next time I stroll down that particular isle at the grocery.
