Ingredients:
Any size zucchini
Your favorite pizza sauce (dairy-free if needed, we like Great Value brand)
Pepperoni slices (we like Hormel brand)
Directions:
Preheat oven to 375 degrees F.
You can peel the zucchini if you prefer or if the skin is tough, otherwise wash it and leave it unpeeled.Slice about 1/8" thick.
Use a spoon to spread small amounts of pizza sauce to cover the whole top surface of the zucchini slices. If you leave too much plain zucchini aroudn the edge of the slice, those edges don't want to cook as quickly in the oven. The moisture from the sauce helps cook the vegetable to tender.
Put 1+ pepperoni slices on each piece of zucchini, completing your little "pizza bite."
Bake 8-12 minutes until fork-tender around the outside.
Serve warm, they are still tasty at room temperature, though. We like ours best with a pinch of garlic salt on each one!
