And now I'm wondering why I waited so long.
Overview- For one 13x17" pan pizza:
As the toppings measurements aren't exact, you should have on hand the following ingredients:
Desired crust, or ingredients from this recipe if using my crust recipe
1 can refried beans
16 oz or more of salsa (extra can be served with the meal as a topping)
family size bag of corn chips (Scoops or Fritos)
green leaf lettuce
1 bag of desired brand of vegan cheese shreds
1-1.5 lbs ground beef
your favorite taco seasoning
your favorite taco toppings: taco sauce, tomato, avocados, etc
For the Crust:
Use your favorite allergy-friendly pizza crust recipe, with 1/2 T onion powder and 1/2 T garlic powder mixed into the dry ingredients, or use my pizza crust recipe, but SUBSTITUTE onion powder for the Italian Seasoning. Prepare crust as directed per package/recipe.
For the toppings added before baking:
200g (or to taste) of refried beans (I used Traditional Refried Beans by Casa Mamita from Aldi)
200g (or to taste) of your favorite salsa (I used Casa Mamita brand Medium Chunky Salsa from Aldi)
265g cooked taco meat (I use Ortega Taco Seasoning Mix, original, with 90% lean ground beef)
130g (weighed after sautéing) sautéed chopped bell peppers and onions (I use Great Value brand frozen ones and sauté in olive oil)
90g vegan "cheddar" flavored "cheese" shreds (We like So Delicious brand best, but Violife is pictured here)
Toppings added after baking:
90g green leaf lettuce, chopped finely
65g Scoops or Fritos Corn chips, crushed
Optional extras: Diced tomatoes, vegan sour cream, diced avocado or dairy-free guacamole, and I highly recommend having your favorite taco sauce drizzled over top as well. We like Ortega Original Thick & Smooth Medium Taco Sauce.
Prepare the crust as directed per package/recipe.
Cook the taco meat, sauté the peppers and onions until tender, and warm the refried beans for easier spreading.
After the crust is baked and is ready to top (when you'd normally put on pizza sauce), spread desired amount of refried beans over crust, smoothing it with the back of a large spoon.
Spread desired amount of salsa on in the same manner.
Spread taco meat, then peppers/onions, then vegan cheese evenly over pizza.
Bake at 425 until beans/salsa are warmed and cheese is melted to desired consistency.
Sprinkle crushed corn chips, then lettuce, over pizza evenly. You can add additional toppings like tomato, avocado, etc. now or you can serve them alongside the pizza for people to customize their own toppings. After cutting with pizza cutter, use a sturdy hamburger turner/spatula to support pieces as you lift them out. Have forks at the table, this is a deliciously messy meal.
