"Ready or Not: 150+ Make-Ahead, Make-Over, and Make-Now Recipes" by Nom Nom Paleo is a hit in our family. I've renewed the book from the library twice now, keeping it for over a month just to sample more goodness.
Fried Green Plantains- We were all surprised at how much we liked them having never tasted plantain before! We'll be making them again for snacks.
Chicken Breasts with Ginger Scallion Pesto- An instant favorite and the pesto whips up quickly and can be used on bone-in thighs or when roasting a whole chicken too.
Bacon-Wrapped Chicken + Lemon-Date Sauce- This was better-than restaurant quality and I made it at home. Soooo satisfying. I did cut back the lemon juice to only 1 tsp. because I didn't want a strong lemon note. Also, I skipped the parsley garnish. My artistic middle son helped me arrange these on our plates.
Nomster Burgers- These were fun and a hit with my husband and oldest son. Opens the door to other ideas as well. We've discovered we like shallots!
Bacon-Apple Smothered Pork Chops- No leftovers from these, if I make it again, I'll try using a stronger-flavored apple as the gala apple I had on hand lost all its flavor to the gravy. Still, no leftovers when I cooked 10 pork chops of varying thickness in 2 cast-iron pans.
Salt + Pepper Fried Pork Chops- These morsels surprised me with their tenderness and fantastic flavor. We'll definitely make these again and my kids asked me to make them the very next night. Mine didn't come out as pretty as the ones in the cookbook, but no one cared, they were gobbled up.
