We found THIS GREAT RECIPE for pumpkin cookies and made it using Bob's Red Mill Gluten Free All Purpose Flour. I always skip the xanthan gum or guar gum as it doesn't agree with my little guy's tummy to eat those ingredients, and I honestly haven't noticed a big difference in our GF baking. Plus, I am saving money and sanity by having one less out-of-the-way ingredient to purchase, store, measure, and use. :) If you want to use it, great! I just wanted to tell people in case they are out of it- no worries as this recipe holds together fine.

We did try the icing/frosting they recommended, but we preffered store-bought or our own recipe better.A bit too much cinnamon flavor for us.
