1 (16 oz) package GF brown rice Penne noodles (or your preferred GF/EF noodle) 4 cups water 1/8 c. Chicken base (powdered seasoning- use as much as your specific GFDF base recommends for 4 c. water) 1 small onion (vidalia), chopped finely 3 cloves fresh garlic, minced 2 T. olive oil 1 1/2 T. dried basil 1/2 cup frozen sliced bell peppers (you could use fresh or a dried red pepper flakes to taste) 1 (14.5 oz) can stewed tomatoes, do not drain (ours has onions, green pepper & garlic canned with it) 1 (13 oz) can of chicken breast in water (do not drain) |
Dump all of the ingredients into a large pot & heat to boiling. Then reduce to a simmer & cook until noodles are done to desired firmness. Check on the noodle package for a time estimate, but it shouldn't be more than 15 minutes, many are 7-9 minutes, making this a super fast dish to prepare. It doesn't taste like it though! You may want to cook the noodles a bit on the firm side if you figure you will have leftovers. The noodles will absorb the sauce and be softer the next day, but the flavor will be mingle & morph into a truly marinated noodle dish.... yum! |
