Ingredients: approx. 6 cups frozen tater tots (make sure they're GFDFEF) 1.5-2 lbs. ground beef 1 (14 oz) jar of GF/DF pizza sauce (like Great Value brand*) 1 (4-6 oz) package of sliced pepperoni (could use turkey pepperoni to reduce the fat) 1 small-med. onion, diced 2 cups chopped mixed bell peppers (I bought a bag of frozen chopped peppers at Trader Joe's, otherwise use 1 green, 1 red, 1 yellow fresh bell peppers) *As of right now Great Value pizza sauce is gluten/dairy/egg free, but always check the ingredients list on the label as products' ingredients are subject to change. |
Bake tater tots in oven according to package direction. While they are cooking, brown ground beef & onion in a large pan on the stovetop. Mix in sauce, pepperoni & peppers (& any other pizza-like toppings you may desire) & stir while heating through and making sure the ground beef finishes cooking thoroughly. You shouldn't have any trouble getting this meat mixture to be done in about the same time it takes the tater tots to cook. Then simply spoon the meat mixture into the bottom of a bowl & add tater tots on top. If you're able to have dairy, or have a dairy-free cheese substitute that you enjoy, feel free to sprinkle that on top, but this has such a good flavor to it that even the members of our family that can have dairy didn't bother putting cheese on top.
