2 T. oil
1/4 cup GF brown gravy mix or GF onion soup mix
1 c water
1/4 c honey
3 T. GF soy sauce (at the time of this post, La Choy is GF)
1/2 tsp. ground ginger
1/8 tsp garlic powder
1 med. onion, chopped
3-4 medium bell peppers (green, yellow, orange, red, you can use a whole bag of the mini sweet peppers), chopped with seeds removed
1 cup pineapple chunks, drained (optional)
Desired amount of cooked white rice ( this recipe serves about 4)
In large skillet, brown pork in oil. Add veggies. Combine gravy/soup mix, water, honey, soy sauce, ginger & garlic powder. Add to pork and veggies; cover and simmer about 20 minutes, stirring in drained pineapple chunks in the last 5 minutes if desired.
