4 boneless skinless chicken breasts
1 (16 oz) can pineapple chunks in 100% juice
1-2 T. fresh ginger (I buy a chunk, peel it all & then freeze it to have on hand)
pepper
1/4 cup soy sauce
3 T. honey
lettuce, rice, quinoa, etc. as a bed
Place chicken breasts in frying pan and drain pineapple juice over them. Grate about 1/2 tsp. of fresh (or in my case frozen) ginger over each chicken breast (a lot will fall off when you flip them while cooking). Lightly pepper, cover and cook. Should your juice evaporate too quickly (which it shouldn't with a good fitting lid), you can add water to keep the pan from going dry/burning. When chicken is cooked thoroughly, stir soy sauce, honey & reserved chunks of pineapple into the sauce & heat through. Serve over bed of rice, lettuce, quinoa, etc.
