1 1/2 cups of Silk Cashew Milk*
4 coffee ice cubes (make coffee however you prefer and freeze in a standard ice cube tray until solid)
2 Tbsp. maple syrup
1/2 tsp. almond extract- this is not optional, it's the star of the show!
Blend it all together and enjoy!
*I had tried Silk brand nut milks in the past and really disliked the flavor and even texture of both the almond and the cashew varieties. However, the cashew one caught my eye when the carton claimed recently that it was now "smoother." I gave it another try and am very glad I did. This new recipe they're using has a touch of almond which reduces that overly sweet cashews and does make for an excellent texture in hot drinks or smoothies! I have one ice cube tray devoted to coffee-cubes all summer long even though I try to limit myself to having this drink only once a week. I use our keurig to make a single cup of coffee and get about a dozen coffee cubes from it. Having dietary restrictions can sometimes be frustrating or disappointing- I miss being able to get together with a friend at a coffee shop and order whatever I'd like to try without worrying about how it would affect my health, however, little gems of a treat like this help soften those longings. This drink tastes every bit as good as a pricey ordered drink and can be customized easily to suit your needs. |
