4-6 pieces of pork loin chops, fat trimmed 2 T. coconut or other oil for sauteing veggies 1 medium onion, chopped 1 green pepper, chopped 3 stalks celery, chopped 4 cloves garlic, minced 1 (14 oz) can stewed tomatoes 2 T. fresh or dried parsley Salt & pepper to taste 6 cups cooked rice to serve meat/veggies over 1 (15 oz) can mandarin oranges, drained |
2. Saute onion, pepper, celery, and garlic in coconut or other oil until tender (about 5 minutes). Stir in tomatoes (and parsley if using dried, if using fresh, wait till later) & bring to a boil. Reduce to a simmer & add pork chops.
3. Cover and continue to simmer 15 minutes. Salt & pepper to taste (and stir in parsley if using fresh).
4. Serve over rice, topped with mandarin oranges.
