I had little food in the house to make tuna salad. No celery to chop up and put it (although that'd be great). So... how about pickle for a little crunch? The kids won't eat it with minced onion, and that tastes better if it sits overnight. I need something quick and sneaky = onion powder!
My seven year old declared that these should be called Tunicle (tuna+pickle) Boats instead. If you don't do pickle, try celery, olives, a bit of cucumber, whatever you have on hand that fits the bill! A slice of carrot would bring a fabulous orange to this snack....
Here's what I did with what I had:
Mix together:
3/8 cup original Veganaise
1/2 tsp. vinegar
1/8 tsp onion powder
1/8 tsp sea salt
Stir in:
3 cans chunk light tuna in water, drained
garlic powder & black pepper to taste
I garnished with a slice of baby dill pickle and loaded mine onto GF corn chip "scoopers."
