In a LARGE (oversized, really BIG, like a soup mug or ramekin) mug, mix:
4 T. gluten-free flour (Bob's Red Mill all purpose GF flour OR white rice flour)
2 T. sugar* (see note in directions)
3 T. cocoa powder
2 dashes salt
1 tsp. baking powder
After above ingredients are mixed well, stir in:
4 T. milk
4 T. oil (coconut oil in its liquid state works)
1 tsp. vanilla
1/2 tsp. apple cider vinegar (white vinegar works too)
Once mixed thoroughly, microwave 3 minutes. The reason for the extra big mug is that it will rise and then fall. Too small of a mug will cause overflow! Remove from microwave and top with 3 T. chocolate chips. (*If you plan to omit the chocolate chips, I suggest increasing the sugar to 4 T. instead of 2)
