We were gifted some Wild Roots Gluten Free Pancake & Waffle mix and when we made "plain" pancakes with it, they reminded me a bit of biscuits. I discovered we really loved using the mix to make Banana Pancakes, and now I finally figured out how to make a batch of biscuits using the mix! FYI: These are meant to be heavier, dry biscuits. If you're looking for light and fluffy, go elsewhere. These are good to dunk in soup, serve with a butter substitute and drizzle of honey or dusting of sugar, or under a gravy based recipe. Yeild: approx. 20 biscuits Mix together 2 1/2 T. ground flax meal & 8 T. water. Microwave (optional but helpful) 40 seconds, watching so it doesn't overflow if you have a small dish. Set aside for 5+ minutes. Mix together: 2 cups Wild Roots Ancient Grain Pancake & Waffle Mix (Gluten free) 1/8 tsp. salt 2 T. vegetable/canola/liquid coconut oil 7/8 cup your choice of milk substitute (I used almond milk) Stir flax mixture into other ingredients and drop about 3 T. at a time onto a baking pan lined with parchment paper. Bake at 350 degrees until edges are barely beginning to show golden in areas. For a tray of about a dozen, mine baked around 20 minutes. |

ALL of her recipes are Vegan, and many can be made gluten-free. I stumbled upon it when searching for dairy/egg free treats to make for my kiddo and have gotten hooked on several recipes. Okay, "hooked on" doesn't portray it well enough. How about "addicted to"? That's more fitting. Will definitely be going back for more! |
