GF Breading Recipe with a Hint of Curry:
1 1/8 cup cornmeal (I used white cornmeal for the ones in the photos, but yellow works just as well)
1/2 tsp curry powder*
1/2 tsp garlic powder*
1/4 tsp onion powder*
1/2 tsp "sweet Hungarian" paprika (or you could use regular paprika, but you may want to scale it back to 1/4 tsp or to taste)
1 1/2 tsp sea salt
1/8 tsp pepper
*I recommend using a quality brand name of spices, such as McCormick or Watkin's, because if you are using a lower quality (or an old/expired use by date) then you will need to increase the amount to achieve the same flavor.
Mix all the above dry ingredients together thoroughly and place in a pie pan or other shallow dish. Take a few cubes of raw chicken at a time and place into the breading, rolling around to coat. (If your chicken is dripping wet from the water due to defrosting, allow excess liquid to drip off before placing in breading.) Place evenly spaced out on a large baking sheet lined with parchment paper (or line with foil and spray foil lightly with oil). Bake at 375 degrees for 15-20 minutes, or until the largest piece of chicken is cooked thoroughly.
