Pity foods, on the other hand, are those foods that you reach out to when you're curled into a ball of emotional mess and you just need a distraction from the drama. My staple pity foods include: ice cream, chocolate.... and now these. I do not suggest running to foods to ease your pains, but I do practice it.
Taking only 5 minutes from start to finish, with no baking, melting or chilling, these little gluten-free, egg-free, dairy-free, (vegan) peanut butter balls are terribly addicting.
1/2 cup smooth/creamy peanut butter (I used Peter Pan)
1/2 cup powdered sugar
If you, like me, want a little chocolate, but are... well feeling too lazy to melt & dip them- substitute some of the rice crispies with chocolate chips.
